Most people are put off eating coconut oil after looking at the nutritional info because it's high in saturated fats. But that's not the whole story, it’s important to dig a little deeper as not all saturated fats are unhealthy. Coconut oil is actually made up of natural forms of saturated fat called MCTs (medium chain triglycerides) which are used by the body as energy and not stored as fat.

Another huge benefit of coconut oil is that it’s highly resistant to oxidation (it has a high smoke point). This makes it an ideal cooking oil - as opposed to olive oil which breaks down when heated.
